Gotham is our dark roast. We use high altitude coffees like Monserrate and Capucas to create a dark roast that has a ton of sweetness and complexity. High altitude coffees generally have more acidity. When you roast a coffee dark, you destroy a lot of the acids in the coffee. Using high altitude coffees means that the complex flavors of the coffees that we buy shine through even in a darker roast.
