Luis Alberto Ballardez grows his coffee in northern Nicaragua, near the border of Honduras. La Peña is part of a larger farm known as Un Regalo de Dios which Luis operates in conjunction with his dry mill, Beneficio Las Segovias.
On the La Peña farm, Luis experiments with processing methods. He grows the Yellow Catuai variety and splits the crop for processing. The La Peña Natural is processed with the natural method, meaning the entire cherry is sun-dried, letting the sugars from the fruit and the skin deeply flavor the seed (or bean). This creates a strong fruity flavor in the coffee, a bright contrast to the more subdued flavor of the Honey processed coffee from the same farm.
