The honey process applied to this coffee infuses it with sweetness and allows the deep notes of chocolate and almond to show off. We have been buying from Luis Alberto Ballardez since 2012.

Luis Alberto Ballardez grows his coffee in northern Nicaragua, near the border of Honduras. La Peña is part of a larger farm known as Un Regalo de Dios which Luis operates in conjunction with his dry mill, Beneficio Las Segovias.

On the La Peña farm, Luis experiments with processing methods. He grows the Yellow Catuai variety and splits the crop for processing. The La Peña Miel is honey processed meaning the skin of the cherry is removed before it is sun-dried, allowing it to ferment in just the pulp on the seed. The sugars from the fruit infuse the seed with sweetness, producing a refined cup allowing deep notes of chocolate and almond to come through.
