Los Lirios is named after the lilies planted around the farm, Jose Luis’s wife’s favorite flowers. The coffee is dry-fermented for 15 hours before being washed and dried on raised beds. Jose Luis built his own micro-mill so that he could oversee the processing for higher quality and is expanding his varietal offerings. His farm is a member of Las Capucas, a coffee cooperative in the Honduran state of Copan.

In 1885, Athanasius Rodolfo Romero bought large plots of land and planted tobacco and coffee. Every generation of his family since then has focused more and more on coffee cultivation and in 1999, Cooperativa Cafetalera Capucas Limitada (COCAFCAL) was founded to link area producers with information and resources. General Manager Jose Omar Rodriguez Romero has lead COCAFCAL to become a model for growth in education, infrastructure support, access to buyers and innovative sustainability initiatives.

The goal of a cooperative is to collectively strengthen a group of farmers so they can eventually thrive independently. Jose Luis Rivera is a perfect example of this. In 2011, he entered the annual competition and earned top honors. In the years we have been buying from him, he has bought a new house, expanded his offerings, and brought his son on to work with him.
