THE STORY BEHIND LOS LIRIOS

In 2011, Jose Luis Rivera entered the annual competition at Cooperativa Cafetalera Capucas Limitada (COCAFCAL) which gives farmers a chance to showcase their specialty lots and catch the attention of international buyers. His luscious, juicy coffee earned second place (after Plantanares, another favorite in the Irving Farm catalogue) and our Green Coffee Buyer, Dan Streetman, has been a fan ever since.

Founded in 1999 by a coffee farmer who was interested in creating a network of organized producers in Western Honduras who could share information and resources, COCAFCAL is one of the most successful coffee co-ops in Central America. Through education, infrastructural support, access to buyers, and innovative sustainability initiatives like ecotourism and beekeeping, Capucas illustrates the ultimate goal of cooperatives which is to collectively strengthen a group of individual farmers so they can eventually leave the co-op and thrive independently. Los Lirios is a great example of a small farm in this region that has successfully followed that trajectory.

Named after the lilies planted across the farm where Jose Luis lives with his wife, this year’s Los Lirios is showing a pronounced vibrancy, full-on cola acidity and plum-like sweetness, despite the colder weather they had which can sometimes pose problems for drying the coffee. Jose Luis likes to ferment the ripe, depulped cherry without water for about 15 hours before washing and moving the coffee to raised beds in a large secadora that he built in 2012. He established a micro-mill on the farm (as many farmers in Capucas have done) so that he can thoroughly oversee the coffee processing and maintain higher quality, and this year he’s working with a new depulper, freshly tiled fermentation tanks and washing canals. He’s also planting another lot of Caturra, an exciting harbinger of many delicious years ahead.

For National Coffee Day we partnered with our friends at Crown Maple and created a riff on the Medicine Man cocktail, combining the tropical sweetness of Los Lirios cold brew with the dizzying depths of dark maple syrup, freshly squeezed lemon juice, spicy paprika and a twist of sage.
